Edwin Vinke about Robert Herder Fishing Knives: "We're going to make those Japanese smell something." There were no chef's knives for Northern sea fishing yet. With the specialist knowledge of two Michelin star chef Edwin Vinke from restaurant De Kromme Watergang, Robert Herder developed a special series of handmade fishing knives.

The Edwin Vinke's Special has a stiff and strong back that fits seamlessly into the curve of the hand. This allows the blade to be guided as if it were a natural extension of your hand. With a rounded tip to cut accurately along the bone without getting caught in the bones. This knife is not flexible but stiff. The blade is thin and sharp from the tip but thicker at the back so that you can cut through fish by hitting the spine of the knife. Blade length approx. 135 mm. POM handle for professional kitchens.
